– Presentation of the cuvée: A good prince, it escapes the generic characteristics of its appellation by its originality. Its generous, often exotic aromas, its freshness in the mouth and its minerality are remarkable.

– Laying down : As a young wine, it is the nose that is very bewitching and highly developed, while the mouth remains “tight”, still marked by acidity. A few years of ageing are recommended (3 to 5 years) for the wine to become fully balanced.

– Ageing: Once the alcoholic fermentation is complete, ageing is both slow and fast: the wine expresses itself very quickly, but if we want to preserve its richness, we must take our time with the bottling.  We do not filter (which is very rare for white wine) and the wine therefore needs time to settle.
