“Golden colour with an amazing glint of green. The nose is complex and elegant. Initial toasty flavour, like toasted hazelnuts – then a suggestion of brioche and honey. On the palate, the attack is extraordinary, clean, one could even say well structured. Compact and solid on the palate. Fatty character and acidity seem perfectly balanced. Long finish, retaining freshness and even a subtle firmness, redolent of dried fruit. Brilliance, purity. Pedigree and distinction. The 1983 Harvest
The summer weather was hot and a few days of hard rain near the date of harvesting (September 26) did not jeopardize the excellent quality of the grape must.

When newly released this wine had typical Dom Pérignon style! The Dom Perignon 1983 has a style similar to many others, but once you have it in your glass there is no doubt as to the origin. The ’83 has more orchid, mushroom cream, and diesel fumes than the ’85, but fewer toasty tones. The Champagne is easy to drink and juicy, rather like chewing a sweet peach.The aroma has become problematic over the years, with tones like plastic and petroleum. The flavour is creamier and more florally refined nowadays, in a similar way to the 85
